Karen’s Bees - Kildare Spring Honey

As I only take honey off hives in the spring if they are surrounded by oilseed rape, I now have a limited amount of spring honey. This year flowering of rapeseed and hawthorn overlapped so it turns out the honey is a mix of the two with dandelion and other spring flowers mixed in. It is thick, luscious and extremely tasty. It will most likely due to the oilseedrape granulate quicker than other honeys, but, hey, just warm it gently then or eat it beforehand!
