Hederman - Smoked & Roasted Nuts & Seeds

We take a random variety of nuts including hazelnuts, walnuts, cashews, almonds, and seeds including sunflower and pumpkin (no sesame), and we smoke them in beechwood, before roasting in batches and then combining, and salting. They are smoky and crunchy and delicious as they are, or, ground up, they would make an interesting base for a dukkah, a delicious coating for pasta (with oil and garlic, and possibly chillies...), also good in salads and breads.
