This ivy honey is pure raw Irish honey from our own honeybees. Ivy honey is quite unique and made by bees from the nectar of autumn-flowering ivy.

Our ivy honey is best eaten as it is, on toast or homemade bread, a dollop added to hot porridge and allowed to melt slightly, or just a spoonful straight from the jar. A spoonful of raw ivy honey is also a great tonic for sore and itchy throats.

Our Irish Ivy honey is quite unique and made by our own honeybees from the nectar of autumn flowering ivy (hedera helix). At a time of the year when little else is flowering in hedgerows and gardens, ivy provides valuable pollen and nectar for honeybees and other bees. Most years, our bees will make a lot of ivy honey. Hence, in those years, we can harvest some of this very distinctly strong and somewhat spicy honey. Ivy honey is also great for soothing sore and itchy throats.

Flavour and consistency
At Hanna’s Bees, we produce small batches of exquisite honey. In order to preserve the natural goodness of raw honey, our honey is not filtered or pasteurized. Our Irish Ivy Honey is light in colour and creamy to toffee like in consistency. Because ivy honey is quite strong on its own, we mix ours with a small amount of rapeseed and spring honey. This way, we can create a sweet yet spicy caramel-flavoured honey, favoured by many honey aficionados. The honey is then soft set to give it a wonderfully smooth texture, allowing the flavours to blend in your mouth as the honey melts.

Soft set honey gets its smooth texture from the minute crystals that form as the honey sets. Kept at room temperature, the honey is spreadable. If kept in the fridge the honey hardens to a chewy, toffee-like consistency. It is an ideal honey for children as it does not drip!

Storage
Make sure not to overheat the honey, as it will destroy some of the enzymes that are so beneficial in raw honey.

Store at room temperature.

Do not give raw honey to infants under 12 months.
