Venison Casserole In Red Wine
2lbs venison casserole
2oz streaky bacon
2 cloves garlic crushed
1 large onion finely chopped
Bottle of red wine
6oz mushrooms
4oz butter
Parsley
20 baby onions
Bouquet garni/salt/pepper/flour/olive oil
In a flameproof casserole dish, brown venison quickly in oil and butter. Add an onion until transparent. Add flour then bouquet garni, garlic and seasoning. Cover with wine and cook for 2 hours at low heat. Separately, crisp bacon and cook baby onions until golden. Add to casserole and cook 30 mins more. Add mushrooms, cook another 15 mins. Remove bouquet garni, add parsley and serve with rice or roast potatoes
