Certified Organic and Biodynamic. Very interesting colour and flavours for the adventurous white drinker. A highly original wine with flavours of peach and fennel with steely acidity.
Made in a 'natural' style, maceration on skins for up to 8 months to provide more tannin, which protects against oxidation, but blend with no-maceration juice to keep fresh fruit flavours. Natural yeast keeps the wine true to its terroir. Vinifying this Grenache Gris separately means the AC Corbieres is not allowed as Corbieres must be a blend. Anne and Jean Lignieres feel that each of their plots has its own unique qualities, therefore want to make wine from each one, as well as the traditional blends. The colour comes from contact with the Grenache Gris skins, which are not quite white or black, therefore 'grey' (gris). Sulphites are kept at a minimum, just enough to ensure that the 'bad' yeasts don't overpower the 'good' yeasts, spoiling the wine. A special organic, volcanic sulphur is imported from Italy. Meticulous care at each stage of the process, form viticulture to winemaking to bottling ensure the purity of the varietal character of this wine, which is floral, ripe and with hints of all the wild herbs growing around it.
No oak, wine is aged in terracotta and sandstone 'eggs'.
