The Green Apron - Gooseberry Jam

This is the taste of a country childhood.
You'd pick the gooseberries, sit for hours topping and tailing them and then Mom would turn them into the most delicious jam -some of which you'd eat slathered on bread with the jam still warm from the pot.
It is a delicious sweet and sharp preserve for eating on everything - including cold meats and cheese and to my mind it makes the very best jam tarts.
