Organic dry-cured back bacon from our free-range pigs.
We traditionally dry-cure our bacon by hand with sea-salt, organic cane-sugar and the minimum amount of Sodium nitrite (E250), to maintain a level of safety for your consumption during the curing process.
We have had our curing process tested and this minimum amount of 50parts per million of Sodium nitrite, reduces to 10 parts per million once curing is completed and than to a miniscule 7 parts per million after cooking.
