Olives West Cork - Tortiglioni

A short cut pasta with spiral grooves. This pasta obtained Protected Geographical Indication (PGI) status in 2010. It's a mix of durum wheat flour with pure local groundwater. The pasta has a coarse appearance, typical of bronze die extrusion, with excellent sauce retention. This pasta has been hailed by world-famous, Michelin-starred chef, Massimo Bottura (as seen on Netflix series “Chefs Table”) as the “best pasta in Italy”.
