Olives West Cork - Rigatoni

Rigatoni pasta is a tube-shaped pasta of varying lengths and diameters originating in Italy. Larger than penne and sometimes slightly curved. Rigatoni characteristically have ridges down their length, sometimes spiraling around the tube, and unlike penne, Rigatoni's ends are cut square (perpendicular) to the tube walls instead of diagonally. This pasta obtained Protected Geographical Indication (PGI) status in 2010. The pasta is a mix of durum wheat flour with pure local groundwater. It has a coarse appearance, typical of bronze die extrusion, with excellent sauce retention. This pasta has been hailed by world-famous, Michelin-starred chef, Massimo Bottura (as seen on Netflix series “Chefs Table”) as the “best pasta in Italy”.
