Linguine is a type of pasta similar to fettuccine but elliptical in section rather than flat. It is about 4 millimetres in width, which is wider than spaghetti but not as wide as fettuccine. The name linguine means "little tongues" in Italian, where it is the plural of the feminine linguina. Simple dish, with good parmesan, garlic and Olive Oil. This pasta obtained Protected Geographical Indication (PGI) status in 2010 and is a mix of durum wheat flour with pure local groundwater. It has a coarse appearance, typical of bronze die extrusion, with excellent sauce retention. This pasta has been hailed by world-famous, Michelin-starred chef, Massimo Bottura (as seen on Netflix series “Chefs Table”) as the “best pasta in Italy”.
