This superior Balsamic Vinegar from Modena in Italy has a protected designation of origin (DOP) from the European Union. Made from cooked grape must (made by pressing Trebbiano or Lambrusco grapes), and then aged in barrels. The vinegar is dense (1.32 g per millilitre), with a fluid and syrup like consistency. Delicious!
