Soak your rice overnight if you want a faster cooking time. Brown rice is much slower to cook than white rice, but soaking your rice overnight can cut the cooking time almost in half. Rinsing after this stage gives great fluffy rice at the end. Place your rice in a pot with 2.5 parts water for every 1 part rice, bring to the boil and then cover and gently simmer for 20 mins ( the pre-soaking works). Remove from heat and sit for 5 mins then fluff up
