The Burren Butcher is an artisan Craft Butcher with a history of three generations of butchering meat in this rugged, rural location 1km outside Lisdoonvarna on the Wild Atlantic Way. Famous for our award winning Burren Beef Burger, melt in the mouth steaks masterfully aged for a minimum of 30 days and our amazing Burren lamb. We strive to minimise our impact on our beautiful environment by running our business in a sustainable manner. Famous fans of our meat include Brendan Gleeson and Christy Moore.
The Burren Butcher is a founding member of the Burren Foodtrail- a collective of passionate food producers who produce food in North Clare. Our specialities won awards at National Craft Butcher Awards, highest accolade achieved- Ireland’s No. 1 Rural Butcher 2016.
Here in the Burren the happy short horn cattle and sheep thrive and graze on herbs and grasslands throughout the winter sheltered by the awesome limestone escarpments of the Burren Highlands and caressed by the fresh air from Galway Bay. This sustainable farming known as winterage is unique to selected areas of Europe, in fact the custom of winterage can be traced as far back to Neolithic farmers who first farmed the ‘ fertile rock’ of the Burren and in turn sustains the ecosystem recognised by the UNESCO Global Geoparks.
The Burren Butcher makes every effort to source beef and lamb from the Burren Co Clare and Co Galway and no further than 50km from our production facility and thus plays its own role in contributing to sustainable pastoral land management and low carbon food miles.
