O’Brien’s cheese is an artesenal farmhouse cheese made in Ballyhahill, West Limerick. Carrying on a tradition of dairy farming that extends across multiple generations, O’Brien’s cheese represents a dedication to local community and to sustainable agriculture in rural Ireland. Milk comes from the farm’s own dairy–herd, guaranteeing its local flavour while styles are inspired by cheese-making practices in Greece, Austria and France. Jim O'Brien looks after the cheese making whilst his son James looks after their dairy herd. The milk travels less than 20 metres from the milking parlour to the pasteuriser within the cheese house.
