Kimchi is a traditional Korean dish made with salted fermented vegetables. It typically contains Chinese cabbage and It may also boast other vegetables, including Chives, radish, celery, carrot, cucumber, eggplant, spinach, scallions, beets, and bamboo shoots.
Though kimchi is usually fermented for a few days to a few weeks before serving, it can be eaten fresh, or unfermented, immediately after preparation.

Easy to make at home
Cut the Chinese cabbage (item “No. 1”) into 1-inch cubes;
Place the cabbage in a large salad bowl and toss some salt (item “No. 2”) over the cabbage, and mix it well with gloved hand (item “No 7”), set it aside for 20 mins ;
Drain and rinse the cabbage, pressing the liquid out;
Add the Fresh Chives (item “No. 3”) and Daikon (item “No. 4”) into the bowl with drained cabbage, and mix it well;
Add the kimchi paste (item “No. 5”) into the bowl, and mix it well, until well coated;
Place the kimchi salads into a tightly sealed food container box, and place the sealed container in the room temperature, and fermenting it for 1-2 days, then place it in the fridge;
Note The ideal temperature for fermenting kimchi 12-18°C. The cooler it is, the slower it will take to ferment. The warmer, the faster. The longer you ferment the tangier and softer the kimchi will get
7. Place the kimchi in a small bowl/plate, drizzle with sesame oil , garnish with toasted sesame seeds (item “No 6”), and fresh spring onions.
