The classic roast. West Moss-side beef is from our small native breed Shetland cattle as seen on the TV programme Landward 2020 : Episode 15. The cattle are virtually 100% home fed - that means grazing the rough ground and the high moss of Flanders Moss National Nature Reserve in the summer months and home grown curlew-friendly haylage in the winter. The cattle are slow growing and go to the butcher at about 30 months. The beef has been hung for 28 days and butchered with respect. It has been fresh frozen to capture all the flavour. As a result you can expect to taste meat which is of the very highest quality, probably the best you've ever had according to my customers. And there is an added extra - the meat is especially high in omega 3 un-saturated fats and it will remain tender during cooking due to its fine marbling. You can put straight in the freezer or once unfrozen keeps in the fridge for 3 to 4 days.
