Prosecco, the main ingredient in a Bellini, is produced in Veneto and Friuli predominantly in the hills north of Treviso in Friuli on the border with Veneto. Prosecco takes several forms; Frizzante, Spumante & Cartizze – The pinnacle of Prosecco, a 1000ft high vineyard where the 260 acres are owned by less than 150 growers and the land sells for around €1 million a hectare! The grapes are harvested late and as ripe as possible, by hand. Prices for Cartizze normally rival champagne. All Frizzante is produced using the Charmat method, also known as Metodo Charmat-Martinotti (or Metodo Italiano) in Italy, where it was invented and is most used. The wine undergoes secondary fermentation in stainless steel tanks rather than in the bottle and is then bottled under pressure. The softer style of Frizzante means it matches food easily and makes for a great aperitif. The glass has a gentle bead of small bubbles and a nose of soft pear and white fruit with a hint of apple. The palate is soft with plenty of tropical fruit and a smooth slightly creamy finish; this is a perfect match with seafood or fruit dishes.
