Real Olive Co & Toons Bridge Dairy - Toons Bridge Cheddar

Our Cheddar is made with milk from Michael Dorney's Friesian and Fleckvieh herd. The milk is thermised at the dairy and we combine Gouda and Cheddar cultures to begin the cheese-making. It matures for a minimum of 6 months in our aging room before release.

Smooth and buttery, this cheddar has distinctive floral notes and an understated earthy character to compliment an enticing, creamy mouthfeel.
