On the Pigs Back - Mont D’Or Vacherin 450G

Raw milk Vacherin cheese. Matured in a round circle of spruce bark, which give it a delicate Unami taste.
This cheese can be consume as is, but is made to be baked in the oven: in a medium hot oven, bake until bubbly (1/2h) and use as a hot dip with piece of bread or breadstick, (like a fondue), or use as a sauce to pour over patatoes, cauliflower, or a steak.... . it’s delicious!
ps: For xtra ‘ quelquechose’ , before putting in the oven, you can also make a cross on the crust with a knife, and insert a clove of garlic’ and pour some white wine... Yum!

This cheese is seasonal, ie only available during the winter months...
