Olives West Cork - Tagliatelle

Tagliatelle is a type of pasta similar to fettuccine. It is about 8 millimetres in width, and really excellent in a carbonara-type dish. This pasta obtained Protected Geographical Indication (PGI) status in 2010 and is a mix of durum wheat flour with pure local groundwater. It has a coarse appearance, typical of bronze die extrusion, with excellent sauce retention. This pasta has been hailed by world-famous, Michelin-starred chef, Massimo Bottura (as seen on Netflix series “Chefs Table”) as the “best pasta in Italy”.
