A classic, raw-milk cheese famous for it's use in all sorts of melty cheese scenarios. The name of the dish, Raclette, comes from French/Swiss verb "racler" to scrape which is how this dish is served heated and the cheese scraped off and put on bread. Another lovely, simple dish is to melt raclette and serve it with potatoes, cornichons and pickled onions with a drop of a nice white wine. Delicious! We hand-cut this every week and pieces are generally 220g+-
