Olives West Cork - Orzo

Orzo, also risoni, is a form of short-cut pasta, shaped like a large grain of rice. This pasta from Di Martino in the Naples region has been hailed by world-famous, Michelin-starred chef, Massimo Bottura (as seen on Netflix series “Chefs Table”) as the “best pasta in Italy”.
- Obtained Protected Geographical Indication (PGI) status in 2010.
- "Gragnano pasta" is a mix of durum wheat flour with pure local groundwater and has a coarse appearance, typical of bronze die extrusion. This gives the pasta excellent sauce retention.
