An elegant pasta, Manfredine, also known as Reginette (Italian for little queens), is a type of ribbon-shaped pasta with a wonderful ruffled flourish. It is flat and wide= with wavy edges on both sides. It is prepared similarly to other ribbon-based pasta such as linguine or fettuccine and is lovely in a lighter more delicate sauce. This pasta obtained Protected Geographical Indication (PGI) status in 2010 and is a mix of durum wheat flour with pure local groundwater. It has a coarse appearance, typical of bronze die extrusion, with excellent sauce retention. This pasta has been hailed by world-famous, Michelin-starred chef, Massimo Bottura (as seen on Netflix series “Chefs Table”) as the “best pasta in Italy”.
