This past, also called gnocchetti sardi or ‘little Sardinian gnocchi’, are a typical pasta from Sardinia. Goes really well with a a delicious fennel sausage, saffron and tomato sauce. This pasta obtained Protected Geographical Indication (PGI) status in 2010 and is a mix of durum wheat flour with pure local groundwater. It has a coarse appearance, typical of bronze die extrusion, with excellent sauce retention. This pasta has been hailed by world-famous, Michelin-starred chef, Massimo Bottura (as seen on Netflix series “Chefs Table”) as the “best pasta in Italy”.
