This Irish Carrageen Moss is gathered off the south and west coast and dried out. It is rich in iodine and is full of natural gelatine which can be used to make a pannacotta or blancmange-style pudding. To get the gelatine out do the following:
- Soak 10g of Carrageen in a bowl of cold water for 15 mins.
- Place soaked Carrageen in a pot with 500ml of water.
- Bring to the boil and simmer for 15 mins until the liquid thickens.
- Strain the liquid through a sieve, pressing all the liquid through the sieve.
- Add lemon juice/ginger/honey/vanilla
- Allow to cool and decant into a re-sealable jar/container
- Once the mixture is cooled it will set into a jelly and will keep in the fridge for 1 week.
It has wonderful medicinal properties as well. People take it as a hot drink with some honey for coughs, sore throats and chest problems, thanks to acting as both an expectorant and an antiviral.
