This activates the amino acids and brings out the natural sweetness in regular garlic. It has almost double the amount of antioxidants when compared to regular garlic. Over the course of several weeks, this process results in sweet jet-black cloves. The taste is sweet and syrupy with hints of balsamic vinegar or tamarind. It's a sought-after ingredient used in high-end cuisine.
