Turnip is very rich in vitamin C and is therefore known as 'the lemon of the north'. It has a raw greenish-yellow skin and is usually eaten boiled or stewed. The yellow, fragrant flesh then has a soft sweet and particularly aromatic taste. Suitable for cooking, stewing, deep-frying and puree. The delicious taste comes into its own when the swede is stewed in butter.
