Sri Lankan recipe of Aubergine marinated with turmeric & cumin then roasted, along with a selection of peppers & garlic finished with a sauce made from shallots, garlic, mustard seeds, red pepper, tomatoes, cumin, coriander, coconut sugar & white wine vinegar.
Awesome with grilled meats, fish Or with curries served warm.
