An Irish Take on Dashi

Starting from a traditional Japanese Dashi broth, we have added a local, plant-based and delicious twist. Dashi is a traditional Japanese Broth bursting with umami flavour and teaming with health benefits. There are several traditional varieties, mostly based around seaweeds, mushrooms, and fish. We’ve sourced Ireland's best seaweed, hand-harvested on the Wild Atlantic Way in West Cork.

Essential Nutrients

For those on a plant-based diet, seaweed is an excellent way to get vital immune boosting and bone supporting nutrients: calcium, magnesium, iron, iodine and phosphorus. But that’s not all seaweed has to offer! It also contains all essential amino acids (proteins), which are so important for supporting the mucosal layer of the gut and reducing inflammation.

Shiitake mushrooms are full of incredible compounds which are anti-viral, anti-microbial, antioxidant, anti-inflammatory and all-around immune supporting such as beta glucans, B-Vitamins, healthy acids and Vitamin D.

Time is the secret to a good dashi. We soak our Kombu overnight, then gently simmer shiitake mushrooms, fresh ginger and turmeric to extract their medicinal properties. Enjoy it with a spoon of miso! Add it to your favourite recipe!
