We use fresh morning milk from our own grass-fed cows to make delicious Raw-Milk Cheddar.
The milk is neither cooled nor heat treated, so all it's natural goodness is preserved by the traditional cheddaring process which we use. Coolattin Cheddar is Matured for over 10 months during which the proteins and fats break down to give a complex, rounded flavour, which is hard to resist.
