Balhomais Farm - Red Cabbage
Before cooking cut the cabbage into quarters, remove the stalks and shred or chop the leaves. Top tip: always cook red cabbage with a little vinegar as this preserves the beautiful purple colour – without it, the cabbage will turn blue! NB this is also a wonderful vegetable to eat raw in salads when chopped finely – adds wonderful colour and texture.
