We are an urban mushroom farm based in the West of Scotland growing gourmet mushrooms such as oysters, shiitake and lion’s mane. We pride ourselves in using sustainable farming methods, so our offering will change throughout the year. We’ll have cold weather and warm weather varieties depending on the season so that we can reduce the heat needed in our fruiting rooms. We pasteurise instead of sterilising our growing substrates, which also reduces our energy consumption; and we supplement our substrates with waste products such as used coffee grounds, thereby helping to reduce the waste from our local cafes. The aim is to bring speciality varieties of mushrooms to our local community using as little energy, and travelling as few food miles, as possible.
