Rívesci (Ree-vess-ee) launched in September 2019 at Clonmel Applefest offering cooked from scratch dishes from their 1976 vintage caravan. Co-Founders Shannon Forrest and Michelin Star trained Chef, Declan Malone felt that opening a food truck in Winter might be a little mad but it didn’t stop them. After spending many months researching and working on their menu offering they found there was a huge appetite for what they wanted to do. Successfully trading at Savour Kilkenny, Applefest Abbeyleix, Dunbrody House and Ballymaloe, Rívesci wished to set up a more permanent basis in Clonmel, and up until mid March 2020 traded weekly at the Quay Car Park and Clonmel Farmer’s Market. During the COVID-19 lockdown Rívesci pivoted their business and now are full time condiment makers!
Rívesci has been featured in the Irish Independent, The Irish Times, The Business Post, RTÉ Nationwide and The Sunday Times had them listed as one of the best 30 sandwich spots in the country along with them winning a 3 Star Great Taste Award from the Guild of Fine Food (UK) for their Cashew Chilli Crush!
