Grá Arán is a home based micro bakery producing mostly sourdough loaves. Sourdough is a traditional method of producing bread using 3 simple ingredients - flour, water, salt, the fourth ingredient is time. Each loaf produced takes up to 3 days in the making. My starter/levain used is a blend of strong white and Wholemeal Stonegound Rye which is grown and milled by The Little Mill in Kilkenny. All breads are mixed and shaped by hand and after proving overnight in the fridge are baked on stones in a Rofco oven.
