Thyme by Paul Newman is based on our family hill farm, Errichel, in Highland Perthshire, where we rear native cattle, sheep, pigs and chickens in a low impact system, working with nature to produce a quality natural product. Paul started making his own preserves and chutney, cured meat and fish, in small batches in our kitchen for use in Thyme at Errichel Restaurant & Rooms. When guests started asking to take some of our produce home with them we started producing jars for sale. Paul uses the best local and Scottish produce combined with flavours and influences from around the world to create an exciting range of award winning products so you can enjoy Thyme at Home.
