The Hennessy family have been farming in Coleman for over 100 years and we, Matt and Trish, are now the proud custodians of the family farm along with our three children, Ella, Jack and Lucy.
Our Organically certified farm is nestled in the valley of Slievenamon in the townsland of Fethard, Co. Tipperary. Our farm consists of woodlands to the north and diverse pastures and meadows rolling down to the Moyle river to the south.
We love the biodiversity of our family farm, it is not only home to our happy flock of Organic hens, it is also home to our herd of Organic Kerry Cows native to Ireland but, now unfortunately on the critically endangered list with only around 300 registered cows left in the world, 20 of which graze our organic pastures here in Coleman. The conservation of these beautiful creatures is very close to our hearts. Our woodland consists of Ash, Oak, Larch, Spruce, Birch, Apple, Cherry and Plum with approximately forty thousand trees in total.
We have completed our Organic Principles course with the National Organic Training Skillnet along with all five modules of the Holistic Regenerative Farming Training with the Savoury Institute in the UK.
Our holistic statement of purpose is to continue to protect and improve biodiversity on our family farm, to conserve our native breeds and supply our local community with healthy organic nutritiously dense food of the highest quality and standards in the world.
